Honey: Garden to Table

Honey is nectar collected from flowers and cured by the bees. Color and flavor vary depending upon rainfall, temperature, and season. Availability may be affected by hurricanes, droughts, and other adverse weather conditions.

Here in Highlands county, spring is heralded by blueberry, lychee, and citrus flowers that make for a subtle, delicate honey. In the summer, the bees visit wildflowers and pale palm blooms with a mild, golden nectar. Fall sees the forests full of Brazilian pepper tree blossoms with the strongest, darkest floral flavor profile of the year. During our brief winter, honey bees rely on garden weeds like Mexican clover, Spanish needle, and sweet clover.

We take care to only supplementary feed our hives when necessary to ensure the highest quality, natural honey is produced by our bees—directly from purely floral sources. Our honey is filtered once to remove wax cappings, and bottled raw.

Our goals include increasing local habitat and forage for pollinators. Through profit from honey sales, we are able to provide vital pollinator corridors, as well as community education and outreach opportunities.
